- 1 large pomelo or grapefruit
- 40 g peanuts, toasted and roughly chopped
- 175 g raw king prawns, peeled and deveined
- 2 tablespoons grapefruit juice
- 1/2 tablespoon Thai fish sauce
- 4 spring onions, finely shredded
- 6 mint leaves, finely shredded
- 1 large red chilli, finely sliced
- pepper
- pinch of grated nutmeg
- 4-5 salad leaves
Preparation time: 10 minutes
Cooking time: 1-2 minutes

Hi readers, it has been a while since we post on our healthy recipes. We will continue posting new healthy recipes from this weeks onwards. Thanks for the patient and support given.
This weeks recipe going to be banana muffins with cinnamon topping. This recipes is to make 6 muffin.

Ingredients:
- 100 g plain wholemeal flour
- 25 g soya flour
- 3 tablespoons light muscovado sugar
- 2 teaspoons baking powder
- 1 egg, beaten
- 50 ml soya milk
- 50 ml sunflower oil
- 2 ripe bananas, about 200 g when peeled, roughly mashed
Topping ingredients:
- 1 tablespoon golden linseeds
- 25 g self-raising flour, sifted
- 15 g butter, at room temperature
- 40 g demerara sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon water
Preparation time: 15 minutes
Cooking time: 20-30 minutes
Oven temperature: 200 degree celcius Gas Mark 6
