Pomelo and prawn salad

This weeks recipe going to be “Pomelo and prawn salad” . This recipes is for 4 serving.

 

 Ingredients:

  • 1 large pomelo or grapefruit
  • 40 g peanuts, toasted and roughly chopped
  • 175 g raw king prawns, peeled and deveined
  • 2 tablespoons grapefruit juice
  • 1/2 tablespoon Thai fish sauce
  • 4 spring onions, finely shredded
  • 6 mint leaves, finely shredded
  • 1 large red chilli, finely sliced
  • pepper
  • pinch of grated nutmeg
  • 4-5 salad leaves

 Preparation time: 10 minutes

Cooking time: 1-2 minutes

  1. Cut the pomelo or grapefruit in half and scoop out the segments and juice.
  2. Discard the pith and thick membrane surrounding each segment, then break the flesh into small pieces.
  3. Mix the toasted peanuts with the pomelo or grapefruit.
  4. Simmer the prawns in a saucepean of boiling water for 1-2 minutes, or until pink and cooked through.
  5. Drain well and add to the pomelo or grapefruit with the grapefruit juice, fish sauce, spring onions and mint.
  6. Sprinkle the chilli, pepper and nutmeg over the salad and toss well.
  7. Line a bowl with the salad leaves and spoon in the salad.
  8. Serve the salad immediately.
